In Quebec, there are only two ways to sell your syrup when you are a producer. The first is to sell it to the Quebec Maple Syrup Producers (PPAQ). This requires a maple quota and if you don't already have one, it's quite difficult to get one. The second is to sell retail without an intermediary. You can sell all the syrup you want directly to the person who consumes it in containers of less than 5 liters or 5 KG without having a quota.
If you have a quota, everything is fine, but if not, you will be forced to add a step in your syrup production project: packaging.
The packaging
Packaging can be done in several ways, you can package your syrup hot or cold, but all cold-packed syrup must be kept in the freezer before opening to have good conservation. Hot-packed syrup can be kept at any temperature.
But be careful, to succeed in a good hot packaging there are several conditions to respect. My first advice is to use a bain-marie. When the flame heats your syrup directly, the reaction at the base of the sugar stone begins, because the bottom of your container reaches a very high temperature. With a bain-marie, the temperature of your syrup will never exceed 100 ° C and your syrup will remain very clear. Your syrup must have a temperature of 85 ° C (185 ° F) IN your container for sterilization. So, if you use the bagger , you have to feed yourself with a bain-marie that heats your syrup and be sure that at the exit you have 85 °C (185 °F). Then, to be sure that your container is well sterilized, you have to make sure that once closed, there goes hot syrup on all these interior surfaces. So, you put it upside down for a second right after closing it to be sure that there goes hot syrup everywhere.
Another important point when packaging is the density of your syrup. To be sure of having a good conservation, your syrup must be at 66° Brix. A ° Brix too low brings risks of fermentation and a ° Brix too high brings crystals in the bottom of your containers.

Then, all you have to do is sell it. The reality is that it is now easy to find maple syrup at $40 per gallon in Quebec. Some use techniques like donating a small amount to charities for each sale. Others set up a kiosk in various markets. So, it's up to you to be resourceful and develop your methods to sell your syrup without difficulty. 🍁
